Ginger III – Let’s Get Dressed!
Salad dressings, yes. Marinades, yes. Ginger, heck yes.
I know, I know, I know. We get in the same rut. Making homemade dressings but they are so much of the same thing every single time. Delicious, but why not add more to the repertoire? While you are at it, let’s wow your family and friends.
Psst. These dressings include Ginger, one of the grandest of the ancient healing ingredients. Most of us can use some natural anti-inflammatory foods in our diet. Enter Ginger, not just beautiful for you but also beautiful on your taste buds.
Asian Carrot Ginger Vinaigrette
If you like Asian dressings, this will be a hit!
4 oz. carrot
0.4 oz. fresh ginger root
3 tbsp rice vinegar
1 tbsp coconut aminos
1.5 tsp toasted sesame oil
¼ tsp coarse sea salt or to taste
2 to 4 tbsp water
⅓ cup olive oil
Pulse /chop carrot and ginger in a few times until very finely minced. Add the rest of ingredients and pulse a few more times until the ingredients have almost been pureed. Store in a sealed jar in the fridge for 1-2 weeks. Shake before using. Terrific on salads!
Ways to use this Ginger-Sesame Vinaigrette
The obvious:
Pour it over a mess of salad greens and chopped veggies.
The more adventurous:
Toss it with shredded Napa or savoy cabbage, green onions, orange segments, diced chicken and a few sliced almonds for a 5-minute healthy remake of your favorite restaurant-style Asian Chicken Salad
Brush over shrimp skewers before grilling
Use as a marinade for pork chops or loin
Use as a stir fry sauce
By now, I guess you have probably picked up on the fact that I’m a big fan of Ginger. It’s a staple in my kitchen and I add it to all kinds of dishes. Once you get used to it, it’ll be like other easy ingredients. You won’t need a recipe to work with it. In addition to being super tasty, its oh so good for you!
